Strawberry Thyme Lemonade: Eating Seasonally

This lemonade is perfect during strawberry season, when the weather starts to get warm and the afternoon sunshine brings a hankering for something sweet served over ice. Once you begin making lemonade at home, it’s hard to go back to store-bought. The thyme paired with strawberry creates a unique flavor. To me it almost tastes like bubble gum. While I originally created this recipe with thyme, basil or mint are also delicious options!

WHAT YOU NEED

  • 1 cup of lemon juice, freshly squeezed

  • A large handful of fresh strawberries

  • A handful of thyme or an herb of your choice (I love using either thyme, basil, or mint)

  • 1/3-1/2 cup of cane sugar or raw honey to taste

  • 5-6 cups of filtered water

STEP 1

Juice the lemons, de-stem the strawberries and the thyme.

STEP 2

Into a blender, add the lemon juice, strawberries, thyme, and sugar. Blend on high speed for about 30 seconds or until combined. You now have a delicious lemonade concentrate.

STEP 3

Pour the concentrate from the blender into a glass pitcher. Add 5-6 cups of filtered water to your desired taste. I like my lemonade pretty strong! It’s completely customizable to your liking in this way. Chill in the fridge before serving. The fruit pulp will settle to the bottom overtime, so be sure to give it a stir before pouring into glasses to serve. Enjoy!

Ecclesiastes 3:1 says “for everything there is a season” and strawberry season sure is one of my favorites! I hope this fresh and bright recipe makes your summer sweet.
