When I was young, my mom would make the most delicious layered dessert using boxed orange Jello and Cool Whip. Now a days, those are not ingredients you will find in my kitchen, but that led me to creating a healthy spin-off using my favorite gelatin from Perfect Supplements. What you need

  • 2 1/2 cups of orange juice (not from concentrate & not fortified)

  • 3 tablespoons of a good quality gelatin

  • 1/4 cup of heavy cream

  • 1 tablespoon of real maple syrup

  • 1/2 teaspoon of vanilla extract

  • Pinch of sea salt

  • 8x8 baking dish

  • Coconut oil to grease the dish

To Prepare

  1. Add 2 cups of the orange juice to a saucepan and warm on medium heat. Meanwhile, put the other 1/2 cup of orange juice in a separate bowl.

  2. Sprinkle the gelatin over the orange juice in the bowl and allow it to absorb and thicken. This is called “blooming” the gelatin and will allow for an even incorporation when added to the warm juice.

  3. In another bowl or jar, combine the heavy cream, maple syrup, vanilla extract, and sea salt. Whip the cream by hand or using a battery whisk until it’s light and fluffy.

  4. Once the juice on the stove is quite warm, but not boiling, remove it from the heat and stir in the bloomed gelatin until completely dissolved.

  5. Gently fold the whipped cream into the orange juice and pour everything into a greased baking dish.

  6. Allow to cool a bit and then transfer the pan to the fridge until fully set, about 3-5 hours. During this time the cream will rise to the top and will create the most delicious layers!

  7. Cut into squares and enjoy! You can either cut them all at once and store in an airtight container or cut pieces as desired and cover the entire tray with cling wrap.
